30 day challenge

In about a month from today, I will be graduating from college, ending a four-year long journey. I’ve known that this was coming but as it comes closer and closer I find myself feeling a storm of excitement, anxiety and expectation. Whenever I feel like this I tend to start reading articles or turn to TED talks for some perspective. (does anyone else do this? let me know!)

Yesterday, I spent a chunk of time watching the whole “A Better You” playlist of TED talks (found here) for some much needed reassurance and advice.  Some of these videos I’ve already seen many times. Many were new to me. All were good as usual.

Pairing the inspiration and information I got after watching these videos and the sobering realization that my academic career is reaching its end, I got an idea: “You have a month to make things happen. Let’s do it”

So… For the next 30 days there are 3 things that I will do everyday, inspired by the talks in the playlist.

Baby Is Back

I’m Baaaaack and I come bearing a dose of beauty to boost your day!

The last couple of days I’ve been running in Central Park . The Hudson River is beautiful but I’ve been running along the river for years; I needed a change of scenery. I’ve been walking up to the bottom corner of Central Park and running around the bottom half of the park. Next time I’ll try to go up to the reservoir like I mentioned before.

Even though the run is a bit more challenging ( it has more inclines and curves) the energy is infectious and the weather has been so nice lately that the run was more enjoyable than difficult.

Has it really been days since I posted?

Anyway, I’ve been awake since about 3 AM and in an effort to fully regain consciousness I started to click through some random youtube videos. The first couple were ridiculous. Some were funny but I finally came across this one and I think it’s something we all need to hear.

Chop Chop

I’m a salad fiend so the other day I thought I’d try to make a different kind of salad, inspired by Whole Foods. Result: I made what could roughly estimate to be about a weeks worth of detox salad: a light and energizing salad that is vegan, gluten-free, oil-free, soy-free. Ingredients and better pictures here

I’m not vegan by any means and I don’t usually like broccoli and cauliflower raw but this salad was enjoyable and filling. Saves me the trip to Whole Foods and as you can see I had maybe a bit too much fun with my new food processor.

It gives me a boost of energy and leaves me feeling satisfied even though the portion seems small.

Ok maybe it looks like rabbit food but eating healthy tastes/feels so good
